One-fourth cup vegetable oil

Three minced garlic cloves
One medium chopped onion
1 to 2 sliced and seeded jalapenos (size dependent).
1 fresh chopped green chili
3 chopped oregano leaves or 1 teaspoon dried oregano
1/4 teaspoons black pepper
1 teaspoon cumin
1/4 teaspoon coriander
1.5 teaspoons chili powder
Cayenne pepper 0.5 teaspoons
2 cans liquidized northern white bean liquid
Three cups vegetable stock
Two cups of water
1 vegetable broth
Mix 3 tablespoons cornstarch with 2 teaspoons water.
1 Heat the vegetable oil in large pot. Add the vegan chicken nuggets to the hot oil. Cook for about 5 minutes. Next, add the onion, green chile, jalapeno and garlic. Continue to sauté the onions for 5 more minutes or until tender and transparent.
Continue to sautee the soy chicken until it is browned.
Next, add the water, bouillon and vegetable broth to the pot. Cover the pot and let it simmer on low heat for 45 minutes. After 45 minutes, add the cornstarch mixture to the water mixture. Whisk, then boil on low for 20 more minutes.
You can garnish the dish with cilantro, sour-cream, and cheese if you wish. However, it is so delicious that you may not feel the need to.

If you are unable to find Delight Soy Vegan chicken nuggets, you can substitute a “mock-chicken” nugget/patty. It should not be breaded. Seitan is another great option.
